Prepare the potatoes to be meshed potatoes. If you are lazy as I am, you can use puré to save your time. Just pour boiled water into the puré and stir it. When the mashed potatoes cools down, we can put chopped ham into it. Season some salt and white pepper into it, as much as you like.
Use transparent film to wrap the prepared mashed potatoes. The weight should be less than 500g so that the egg wrap can cover the meshed potatoes.
Crack 2 M-size eggs into a bowl, add a pinch of salt and beat them until you smooth optionally. You can add some chopped green onions and chopped carrots into the egg mixture for extra flavor.
Heat a little olive oil in the frying pan over medium heat. Put the mashed potatoes into the pan and reduce the heat slightly once the mashed potatoes begins to set, to prevent burning.
Pour the egg mixture into the pan and spread it into a thin, even layer to form an egg wrap, reduce the heat slightly once the egg begins to set, to prevent burning.
Roll the mashed potatoes into the egg wrap gently. Repeat pouring egg mixture and rolling the filling until we use up the egg mixture.
Cook until golden when the both sides of it are golden brown, we can switch off the oven and cool it down aside. Cut it in size that you like. Enjoy!
