Chestnut mushrooms 2 packs Remove core stock of mushrooms and put these in a blender, together with 1 handful of fresh coriander, 2 cloves of garlic, 1 spring onion, 1/8 red onion+2tbspoil (pre fried in oil), 1/2 tsp Sichuan pepper oil, 1tsp soy sauce, 1tsp fish sauce, 1tsp rice vinegar, 1tbsp sugar, 1tbsp sesame oil. Blend and place mixture on top of mushrooms in baking tray. Bake under grill for 10min.
