Preheat oven to 400 degrees F and cut a sweet potato in half. Place flesh side down on a foil lined baking sheet and bake for 30 minutes.
Mash the sweet potato to make a puree.
1. Bring water to a boil in a small saucepan. 2. Once boiling add your oats and reduce heat to medium. Continue cooking until the oats have absorbed most of the water, about 5 minutes. 3. Stir in sweet potato puree and cinnamon, continue stirring until well combined.
Serve with your choice of topping, or just enjoy the oatmeal itself.
*For steel cut oats: 3/4 cup raw steel cut oats to 2 cup boiling water, reduce heat to simmer and cover. Cook for about 25 minutes.
