Nadia here, In the past, I never liked meringues. They seemed so plain and I always felt like I was eating nothing when I took a bite into them. However, Jasmine convinced me that we should make them using this recipe below (which we will show you how to make in a few seconds!). So…after completing this recipe, and tasting these goodies, they’ve actually become my current favorite dessert! Not only are they super delicious, they are oh so beautiful to look at! 将蛋清倒入碗中,用打蛋器搅匀。 In a bowl, place the egg whites and whip with a mixer.

将蛋清打发成直挺挺的尖角,将碗倒转过来蛋清也不会倒出来即可(大约需要15分钟,见上图)。 Whip the eggs until stiff peaks form and the mixture does not slide out when turned upside down (approximately 15 minutes, see picture).

逐步加入白糖后混合,再加入香草精和色素。加速搅拌直到用手指去捏都能感觉到润滑为止。 Gradually add in sugar to the mixture. Then add vanilla and vinegar. Increase the speed of the mixer and whip until the mixture feels smooth when rubbed between two fingers.

做好的蛋白甜饼应该看起来很有光泽且有硬性发泡(见图)。 The meringue mixture should look glossy and have stiff peaks (see picture).

我们觉得一个漂亮的彩虹蓝色会让你的甜饼看起来更棒!我们将混合物倒入三个碗中,在第一个碗中加入3滴蓝色色素,在第二个碗中加1滴,第三个碗不用加。 We thought a nice ombre blue design would look great for the meringues! We did this by separating the mixture into three bowls, then added 3 drops of blue food coloring to the first bowl, 1 drop in the second bowl, and left the third bowl white.

将这些混合物装入一个挤花袋中再上上裱花嘴。因为我们用到3个颜色,所以我们用的是一个3色裱花转换器(见上图). Put mixture into an icing bag fitted with a round tip. For our 3 color meringue we used a special icing tip that can fit 3 icing bags (pictured above).

将糖霜挤1英寸在烤盘上。 Pipe the meringues 1 inch apart on a baking sheet.

将糖霜在93摄氏度的温度下烘烤90分钟。然后放在铁丝架上待冷却。 Bake the meringues for 90 minutes at 200. Let cool completely on a wire rack.
