Peel & chop water chesnut+mushrooms+bamboo into tiny cubes, soak bean vermicelli in water for half an hour and then chop to small pcs Note: if you cannot get bamboo or mushrooms or chestnut, you can use alternatives like carrots, black fungus, or veggies you like that are not so watery. Just remember, everything can be replaced by something :)
pre-heat the pan with oil, slide mushroom cubes first and stir fry them until it gets soft, then water chestnuts+bamboo+bean vermicelli in, spread some salt, pepper, soy souce, sugar and fry a little bit.
prepare buns to make wrappers. buns can be prepared by just water+flour+salt, let it "rest" for 15 mins in warm moisture place before cutting to small bun piece.

1: Traditional Way!
2: New Way (I use this, haha) You have to do it on both sides
Pre-heat the pan with oil (more than usual), wait until the oil is really really hot, slide in all the dumplings, enjoy that cracking noise, let the bottom be really deep fried until it becomes golden crispy, then pour water until 1/3 - 1/2 of dumplings are in the water (but they should not be floated) then cover the lid until the water went dry. Done!
Spread some sesames on it and.... Tada! Enjoy ~
The dipping sauce of the stickers can be just vinegar, but the luxury version can be: the black bean paste+onion+peanuts+garlic+vinegar+sugar.....Crazy Delicious !
