this makes 6 bread
* used equal parts of milk to sub water, works well, less sticky than using water
Honey 老面 starter:
110g high-gluten flour,
1g salt, 13g honey,
70g water,
0.5g yeast. = 1/8 tsp
You can also skip the honey and just remove it.
Whole wheat 烫种:
75 grams of whole wheat flour,
150 grams of boiling water
Main dough:
300 grams of high-gluten flour,
all the honey starter,
all the whole wheat blanched dough,
6 grams of salt,
3 grams of dry yeast,
150-180 grams of water -- sticky; 130 g water on 11/29/2024
filling
80 g raisin
(soak with 1/4 volume of liquid ---- 20g water or rum)
100 g walnut --- could toast in 140C/284F for 30 mins, w/o preheating oven

Bake at 230C/446F for about 20 minutes, or till internal temp reaches 200F
- 4/20/2023: bake at 400F for 25 mins (20+, but may not need full 25mins, when I tested, it was past 200F)
- 5/18/2024: (rough record) bake at 365F for 20 mins, then 400F for 7 mins, then turn off the oven and leave it in for 5 mins.
-11/29/2024: bake at 375F for 27 mins
