take butter to room temp

make dough, rest for till double volume for ~ 1 hour (in Feb, takes 2 hours or so)

make mochi - mix all and microwave at 1 min intervals (mix in between) - cool in the fridge for at least 30 mins

assemble chocolate dough, mochi layer, walnut and raisin, then roll up - two rolling up methods, the one with only one roll from top to bottom turns out better

proof for 1 hour till light bounces back when pressed upon (in Feb, takes longer)

Bake at 190C/375F for 20 mins - 2/17/2024: bake at 420F for 21 mins (needs longer)
