Ingredients
Mochi
Glutinous rice flour 50g
Corn flour 15g
Caster sugar 25g
Milk 85g
Unsalted butter 15g
Dough
Bakers Flour 280g
Milk powder 15g --- skip
Cocoa powder 15g
Dark brown sugar 35g
Instant yeast 4g
Salt 3g
Egg 55g (1pc)
Milk 150g --- used 120 g instead
Unsalted Butter (soften) 30g
Fillings ---- at 2/17/2024, we did 25g raisin and 25 g walnut in each bread (50g filling in total for each bread)
raisins 30g
Walnuts 30g
Dark brown sugar 3g

make dough, rest for till double volume for ~ 1 hour (in Feb, takes 2 hours or so)

make mochi
- mix all and microwave at 1 min intervals (mix in between)
- cool in the fridge for at least 30 mins

assemble
chocolate dough, mochi layer, walnut and raisin, then roll up
- two rolling up methods, the one with only one roll from top to bottom turns out better
步骤 5
proof for 1 hour till light bounces back when pressed upon (in Feb, takes longer)
步骤 6
Bake at 190C/375F for 20 mins
- 2/17/2024: bake at 420F for 21 mins (needs longer)
