for 250 g chive, used some shakes of oyster sauce and 1/2 tsp salt, and 1/4 tsp of salt in eggs
For making 70 dumplings
Dough:
All purpose flour: 400 g. --- i made 500 g worth of dough for the filling
Salt: 1 g
Water: 190 g
Vegetable fillings:
Chinese chives: 180g --- used 250 g chive; coated with vegetable oil and sesame oil
Eggs: 3 ---- also used 6 shrimp
Fried tofu balls: 80g --- replaced with 90 g of bean curd
Shiitake mushrooms: 80g --- skipped
Rehydrated black fungus: 50g ---added 80 g black fungus
Sesame oil: 2 tbsp
Dried baby shrimp powder: 20g
Oyster sauce: 1 tbsp
Ginger paste: 1 tsp --- used powder, several shakes
5-spice powder: 1/8 tsp
Salt: 1/2 tsp
