blanch celery and shrimp
mince xiao-mi chilli pepper, onion, garlic, cilantro splash hot oil over them
add in 2 tbsp soy sauce, 2 tbsp vinegar, 1 tbsp sesame oil, some oyster sauce, salt, and sugar
add in 4 slices of lemon and squeeze the juice of the rest of lemon into the bowl - could press on the slices to release flavor as well
dump in shrimp and celery and other seafood to your liking
