1 cup hijiki (a seaweed found in Asian stores) 3 cups spring or filtered water 1 medium onion, sliced 1 carrot, sliced into matchsticks 1 tablespoon toasted sesame oil 2 cups shiitake mushrooms, sliced 1 cup apple juice 2 tablespoons wheat-free tamari 1 teaspoon freshly grated ginger root
Soak the hijiki for 10 minutes in water. Strain and keep the water. In a sauce pot, sauté the onion and carrot in sesame oil until the onion is transparent. Add the hijiki, the hijiki soaking water, the shiitakes, and the apple juice. Cover and bring to a boil, then lower the heat and simmer gently for 45 minutes. Stir in the tamari and juice squeezed from the grated ginger. Simmer until most of the liquid is evaporated, about 15 minutes. Serve warm or chilled.
