https://www.youtube.com/watch?v=eVEGcsaMOkY dough -- this makes 7 bread bread flour 270g -- used all-purpose pastry flour 30g --- used 15 g corn starch to sub some sugar 24g Salt 3g Milk 110g --- used 91 g milk, a bit dry (doesn't affect the result, but could be more) Concentrated milk 30g egg 60g dry yeast 3g (or Fresh yeast 9g) Unsalted butter 48g kitchenaid process: Put all the ingredients (including butter, but I added in the end like normal), Slowly knead the ingredients in third gear for about 8 minutes Change to 5th gear for 5 minutes. Baking temperature: convection oven (Gobike t60s):180℃ for 8 minutes traditional oven (Karcher 750s): top 210, bottom 190 for 10 mins

shape: roll into a 21*23 cm rectangle, then cut into 7 sticks - 4/13/2024: I divided it into 7 parts, then rolled it up like a rolled tray bread

bake at top 210C/410F, bottom 190C/374F for 10 mins - 4/13/2024: bake at 430F for 10 mins, turn oven to 350F w/o taking out the bread, for 12 mins (could be 10, used 12 for more coloring, next time could try less time)
