Bakers flour 250g
Salt 2g
Caster sugar 40g
Milk powder 20g -- skipped
Yeast 4g ~ 3/4 tsp
Milk 90g -- I used 75g
egg 30g ----- (if no egg, could use 5 g milk -- sufficient on 4/22)
Unsalted butter (soften) 30g
Tangzhong 60g -- I used all tangzhong

Bakers flour 12 g
Water 60 g
* when making double-sized dough, use 1 whole egg and 130 g milk (that was sufficient this time), and only 1 tsp yeast if proof overnight; 50 g softened butter
Coconut paste
Fine Coconut 50g
Unsalted Butter (melted) 25g -- I used softened butter for 25 g instead (could be more to adjust the moisture level)
Caster Sugar 20g
Egg 20g -- skipped this (could keep using this if i didn't use the other half of the egg)
* v2 of filling:
half egg (whatever left from taking 30g away)
50 g coconut
15 g melted butter
20 g sugar

rest for 1 hour
AND
make coconut paste

shape:
divide dough into 3, knead into rectangle and spread coconut paste on, roll it up

bake at 365F for 10 mins, cover with aluminum foil and bake for another 20 mins
* 400F*15 mins + 365F*10min (tried with chocolate bottom banana muffin) --- a little burnt looking on the outside, 400F might be too high or for too long
