chill in fridge for 1 hour
roll the pie dough into a thin sheet grease the glass pie dish and lay the crust on top trim edges, could leave out small bits as decorations chill in the fridge
make filling
bake pie crust at 400F for 10 mins, then reduce the oven temperature to 375 F and bake the pie for another 35 to 40 minutes until the pumpkin filling is set, but still has a little jiggle to it in the centre. * I baked the crust at 400F for 10 mins, then whole pie at 375F for 35 mins *1/11/2025: bake at 350F for 45 mins (also stayed in oven longer, but 45 mins was enough) * leaf deco on top needs around 20 mins to bake
Cool the pie to room temperature, then chill completely, about 4 hours, before serving. The pie is best served chilled, and can be stored, refrigerated, for up to 2 days.
