Sear all the meat turning into brown
Sauté the onion till soft, add tomato paste and garlic, deglaze the pan with beer stock. Add all chilies and all the spices. Braised for one hour.
Pick out the chilies and few cup of stock into a blender. Puréed the chilies and poured back into stock.
Toasted your taco with cheese till melted and put meat into taco. Fold and serve with lime and stock.
