Banana Bread的做法步骤

350g bananas 50g runny honey 50g coconut oil 1 tsp ground cinnamon A pinch of grated nutmeg ½ tsp bicarbonate of soda Grated zest of ½ orange ½ vanilla pod, split open lengthways 4 eggs 200g ground almonds 2 tbsp flaked coconut 2 tbsp desiccated coconut

Preheat your oven to 200°C/fan 180°C/gas 6. Line a 10 x 24cm loaf tin with baking parchment. Peel the bananas and cut a slice from one of them; keep for the decoration. Put the remaining banana flesh in a large bowl and, using a fork, mash to a chunky paste.

Add the honey, coconut oil, cinnamon, nutmeg, bicarbonate of soda and orange zest. Scrape the seeds from the vanilla pod and add them. Mix everything together well. Add the eggs and beat in with a wooden spoon. Mix in the ground almonds until thoroughly amalgamated. Tip the mixture into the lined loaf tin. Top with the flaked and desiccated coconut, and then with the reserved slice of banana. Bake in the heated oven for about 50 minutes until a wooden cocktail stick or skewer inserted into the centre of the loaf comes out dry.

Remove from the oven and allow to cool in the tin for 20 minutes, then turn out on to a wire rack and leave to cool completely. The bread can be kept in an airtight container in the fridge for up to 5 days.
