clean the eggplants and cut thier heads and tails.(洗净茄子,去头去尾)then cut.it to 4cm wide pieces.(切成厚4cm的块)shred the ginger.(姜切丝)mash garlic and green onion.(蒜和葱切末)
cut vertical and horizontal lines on 1 side of the eggplant pieces and make them checkers.(用刀在茄墩一面切格子)lines preferably cut into 1/2 of death(深度为1/2的茄子) heat the pan with oil.pan-fry eggplant pieces until both side golden then take out for further use(锅内烧热油,煎茄子至两面金黄,取出备用)
keep the oil heat.put in minced pork and pan-fry until it is cooked.(油锅烧热,加入肉末翻炒至熟)add green onion,ginger,garlic,salt,soy sauce,sugar and chili oil.mix well and add water.keep pan-frying until flavor can be smelled.take out and put on plate(加入葱末,姜丝,蒜末,盐,生抽,糖和老干妈翻炒均匀后加水,炒出香味后铺在盘子上)
put pan-fried eggplant pieces on minced pork.(把茄子铺在肉末上)put the whole dish in stream pot.(整个碟子放入蒸锅)pour minced pork juice on eggplant.(把炒肉末的汁淋在茄子上)cover the pot and steam for 10-15minutes. (盖上盖子蒸10-15分钟)
put steamed eggplant on plate and cover it with minced pork.(将蒸熟的茄子放在盘子上,将肉末盖子茄子上) add soy sauce,sugar,chili oil,salt,water and cornstarch to a heated pan.after the sauce is made,pour it on eggplant and garnish with green onion pieces.(热锅下生抽,糖,老干妈,盐,水和淀粉烧开后浇在茄子上,撒上葱末)
