去年我们在意大利米兰休假时跟了Chef Aurora学了这道甜品。我吃了这么多提拉米苏,终于做了,才让我恍然大悟,原来是这么做的。不难,但是有关键步骤。这道甜品已经是我每月的菜单中的人气菜了! We learnt this dessert from Chef Aurora when we were vacationing in Milan last year. I have eaten quite a few Tiramisu but was enlightened after I started making it. It is not difficult but it has some key steps. It is now a popular dish on my monthly menu!

用料

把三个蛋清分在大碗 Separate the three egg whites into a large bowl

把蛋黄分在中碗里 Leave the egg yolks in a medium bowl

蛋清加5茶勺白糖,用打蛋器把蛋清打开 Beat the white whites with 5 teaspoons of sugar

打到能够站立起来 (peak) Beat the eggs until it peaks (when it can hold up its peak shape)

意大利的奶酪叫做mascarpone,买不到可以买cream cheese,只要是软的奶酪就能做 Use Mascarpone. If you cannot find it, use soft cream cheese

把奶酪和蛋黄,加5茶勺白糖,用打蛋器拌匀 Blend the egg yolks and the mascarpone, add 5 teaspoons of sugar and mix well

把蛋黄奶酪放入打好的蛋清 Mix the egg yolk mascarpone mixture with the egg white

用一杯冷矿泉水加入4茶勺的速溶咖啡 Add four teaspoons of instant coffee to a cup of cold water

把锡纸铺在容器内 Put foil around container

把一层酱铺在容器里 Layer the container with the mixture

饼干泡入咖啡里取出,铺在酱上面 Immerse the lady finger into cold coffee, remove and place on mixture

用锡纸包上,在冷藏一个晚上。隔天吃前,洒上一层可可粉 Use foil to cover and refrigerate overnight

把饼干折半,泡咖啡后,放入杯里,然后浇上一层酱 Break the lady finger in half and soak in coffee. Place on top of mixture and layer with more mixture on the top

洒上可可粉,放入冰箱一个晚上便可以吃 Sprinkle cocoa powder, refrigerate overnight and serve

重要的是用能生吃的鸡蛋,国内买时要特别强调。咖啡用凉水冲,饼干泡的时候就不会太快化开 It is important to specific fresh eggs that can be eaten raw, especially when shopping in China. Use cold water to make the coffee. By doing so, the soaked lady fingers will not be broken up too quickly
