dough: place 100g water into mixing bowl set 2mins, 80°c, speed 1
add 150g flour, mix 30sec/speed 3, adjust water/flour
add 15g oil, knead dough 2mins
transfer dough into prepared bowl and work into a ball, cover bowl with plastic wrap and let dough rest for 1 hour

pastry : place 10g flour into small bowl
add 20g oil into mixing bowl set 2 mins,120°c,speed 1
add hot oil into small bowl with flour, and mix them, set aside

non spicy sauce, can add a little bit chili to make spicy sauce
place 24g garlic into mixing bowl, 6 sec, speed 6 to chop
add 12g oil

add 40g 3min,120°c,speed 1
add 20g water and 30g sugar 10mins, 100°c,speed 1

ready,

divide into 4 small ball

thin, brush pastry on top



rest for 5 mins

put on some sesame

can be frozen

pan fry with low gas flame

kitchen paper to absorb oil

cut to small pieces to keep them crispy
