春天了,突然就迷上了柠檬,今天先是用简单的方法做了柠檬酱,喏~ 【方法如下】 柠檬1个,鸡蛋1个,细砂糖45克,黄油30克 柠檬擦出皮屑,挤出柠檬汁,将这两部分放在不锈钢碗内。加入细砂糖,想要口味更浓郁的,可以再加入一个蛋黄。锅内加水,放在火上加热,把不锈钢碗放在锅内,把液体隔水加热,用打蛋器不断搅拌。糖融化后加入黄油,继续搅拌,液体会慢慢变浓稠,关火。把柠檬酱装入玻璃瓶,放入冰箱冷藏。 然后把柠檬酱夹心在小纸杯蛋糕的制作过程里,纸杯蛋糕小小的,吃起来毫无负担,柠檬酱的加入酸酸甜甜十分清新,幸福感满满。吃一小口蛋糕,另加一勺柠檬酱,恩~~就是这个感觉。有什么比吃美好的食物更实在的幸福啊? 此配方酱的部分偏酸,觉得酸可以再制作过程中添加糖,或是减少柠檬汁。 First, make the lemon sauce———> 1 lemon, 1 egg, 45g sugar, 30g butter Make the lemon zest, squeeze out the lemon juice, and put these two parts in a stainless steel bowl. Step1 柠檬洗干净,擦出柠檬皮屑。再挤出柠檬汁。Wash the lemon, make lemon zest, and squeeze out the lemon juice.

Step2 蛋白里加盐,再分两次加糖打发。打蛋器头上的蛋白呈现弯钩状态就是打好了。Split the egg yolks and whites. Add a bit salt to the egg white liquid, and separate the sugar into 2 portions. Beat the liquid, add sugar 1 portion at a time, 2 times all together. When the egg white looks like hook shaped one the egg beater head, it’s well done.

Step4 筛入低筋粉和杏仁粉,用刮刀翻拌均匀。Sift in the low gluten flour and almond powder, and mix well with a scraper.
