Also managed to whip up a blueberry yoghurt cheesecake in the air fryer yesterday.

Blended a block of cream cheese, about a cup and half of yoghurt, a splash of milk and two eggs with honey and vanilla. Poured it ontop of some milk damp savoury cracker crumbs and topped with frozen blueberries before baking at 160°c for approximately an hour.

The glaze is made of strawberry jam, dash of leftover red wine, honey and more blueberries. drizzled on top while still warm and once cooled, put in the fridge to chill and infuse. Best served after an overnight of resting.

Will be tasting our 2022 family birthday cake soon this afternoon! I'll try to get a picture of the cross-section to post here! 🎉
