Saw a video on bun making and realised they don't do second fermentations but only one proof after shaping 😱
Tried it for lunch today using the pickle cabbage and pork mince mix I made earlier. Ended up doing some pizza buns too with hot salami, passata, sage leaves, mozzarella and sliced cheese. The pizza buns didn't hold shape too well since it turns into a sack of sauce on the inside after steaming 🤭 tasted good nonetheless.
The buns turned out ok with good chew and recoil after a squeeze but they don't seem as fluffy.. perhaps I should proof them for a little while longer and add a bit more baking powder?
