This is a vegetarian dish you should never miss. Cut your eggplant into a kind of filet-mignon shape, fry in a wok with Sichuan peppercorn and sliced ginger with little cumin powder and chili powder over them. Just little fry on both side. then put on a sauce with garlic, echalote, basilic, olive oil and Chinese light soy sauce, and don't forget sugar, Salt and pepper. 180℃ oven, 15 min. Serve with a bowl of natural flavor polenta should be fine. Truly confortable. If you don't like much oil, you can skip the wok-fry part. Beautiful. Maybe a soft boiled egg on top next time.
